Thanks so much for your kind comment on my blog. I don't have a zuke burger, but I would definitely add it to my rice and bean pattie and give it a go. I'd take out 1 cup of the fice and replace it with 2 cups grated zuke, squeezed dry. I'm sure it would make a yummy and juicy burger. Let me know if you try it before I do.
